Nectarine Blueberry Galette | mandybakes

Finally, this recipe is up!

If you're looking for something to make, this Nectarine Blueberry Galette might be just the thing for you! I've made them the day before I go for my trip to Singapore with my friends, Karmen and Rachel.

I love galettes because the rustic tart-like / pie-like crust, is filled with any type of fresh fruits that you want, and the fact that galette doesn't has to look "perfect"!

Nectarine Blueberry Galette
Type : Dessert, On The Go, Breakfast
Prep-time : 1 hour 15minutes
Bake time : 30minutes

2 1/2 cups all-purpose flour
1/4 cup sugar + 1 tbsp sugar ( divided )
1/4 tsp salt
1 cup unsalted butter ( chilled )
1/4 to 1/2 cup ice water
1 tbsp cornstarch
4 medium nectarines ( pitted and cut into slices )
1 pint basket blueberries
1 egg

1. Combine flour, 1 tbsp sugar, salt in a food processor, pulse to combine. OR you can whisk it with a forks to get it all corporate.
2. Add butter. Pulse the mixture until a sandy like texture. OR massage the butter with the dry ingredients with your bare hands.
3. Add 1/4 cup ice water. Test dough to see if it holds together. Add more ice water, 1 tbsp at a time, if it's not holding together. Dough should not be sticky or feel wet.
4. Roll the dough flat around 1/4" thick and wrap it in a plastic wrap and place it in the fridge to chill for 1 hour.
5. Preheat the oven to 375F / 190C.
7. While the dough is chilling, mix the fruits, cornstarch, and 1/4 cup sugar together in a medium bowl. Let the fruits rest for 30minutes.
8. Remove the dough from the fridge, and place the dough on a parchment-lined baking sheet. Spoon the fruits into the center and fold in sides.
9. Whisk 1 egg in a small bowl, brush onto the crust.
10. Sparkle the crust with some sugar.
11. Bake for 30minutes or until the crust is golden brown.
12. After taking out from the oven, let it chill and is ready to be served!
